Meal Planning Monday - 20 May 2013




Welcome to another Monday. Let's calmly gloss over the fact that it's been around a month since I last did one of these. Needless to say, I have been eating in that time! On the menu this week:

Chicken breast with a herby crust and roasted tomato sauce (left over from last night - score!)
Roast Beef in big Yorkshire pud. Possibly pot roasted in slow cooker depending on time
Frittata with sweet potato and peppers
Vegetable curry with spinach, butternut squash, sweet potato.
Sausage and onion casserole (or barbequed in a bun, depending on weather)
Left overs

Six meals and one night of probably brown dinners (fish fingers/nuggets, beans, you know the drill) or maybe tortilla wraps with salad and cooked meat if I get to the supermarket. A lazy cook's night, anyway.

Meal Planning Monday - 25 March 2013





Welcome to another Monday. I actually have my shit together this week, doubly impressive since it is school holidays here and we've started with one stomach bug (5 year old) and a packed schedule that hasn't allowed sufficient time for sleep (10 year old). Let's hope things calm down soon!

This week we are eating:
roasted chicken breast with garlic mushrooms
beef casserole and dumplings
meatloaf
pork schnitzel and ratatouille
brekkie for dinner (or brinner, as I've seen it called)
baked fajitas
leftovers

I have no plans to bake this week. In preparation for Sunday's choc-fest and next week's visit to Cadbury's World I aim to fill the kids with as much fruit and veg as I can.

Meal Planning Monday - 19March 2012

Once again I found myself pushed for time this week and only managed a rushed meal plan. Next week I am going to plan over the course of the week rather than rush it the night before I am supposed to have the shopping delivered and everyone is nagging me for food because all we have left are some crumbs of non-sugary cereal and a crust of bread. Well, not quite, but they way they go on you would think that sometimes!

Thank God for Pinterest for quick inspiration. If you're not already, follow my menu boards on Pinterest as there are some really tasty dishes on there. I only need 5 meals this week as one night is for leftovers, and one night I am out. Hurrah!
 Crispy Potato Roast with sausages and vegetables
Cottage Pie
Guinness Beef Stew & Soda Bread

I am especially looking forward to the sweet potatoes as they look delicious. Except ... bugger... I have just realised I have forgotten to buy cranberries. Oh well, I will get some later.

On the baking list this week is this little beauty from The Girl Who Ate Everything

It is my birthday on Friday and this is the cake I chose. You can bet I didn't forget any ingredients for that!

Meal Planning Monday - 5 Mar 2012




Baked Mozzarella and Pesto Chicken
Baked Sweet & Sour Chicken and Fried Rice*
I have edited this to suggest you use half the vinegar in the recipe, then taste it before adding more if necessary. Give it a good stir before deciding as the sugar needs to dissolve. It was too tangy for me. I added a little honey to counter the vinegar as it was too late for me. Otherwise it is delicious! It would also be nice with peppers and maybe pineapple.
Chicken, Broccoli, Bacon and Rice casserole (adapted from this recipe)
Baked pork with mustard crust
Pork fajitas
Frittata or omelet and chips (I have a LOT of eggs to use at the moment)

Meal Planning Monday - 3 October


October? October! Can someone please tell me how it got to be October already? I am sure it was only April last week, though given the weather I could have been excused for thinking it was July. 

Here is this week's plan. I'm a bit confused by it all this week as I scribbled October's plan down and then randomly chose meals from it when I did the shopping (always online via My Supermarket). Stupidly I can't remember what I chose so it's a matter of trying to match ingredients to what's on the list.

Sticky 5 Spice Gammon
Moroccan chicken in the slow cooker
(same as the other week. It has been requested again). 
chicken and mushroom pancakes
Meatloaf and mashed potatoes
Quorn, veg and noodle stirfry
Egg, chips and beans

I don't know what, if anything, I'll bake this week. I have been eating far too much of what I shouldn't lately and little pickers wear big knickers.

I currently have a chicken in the slow cooker grossing me out. Naked chickens are so ugly. Half the meat will go for pancakes and the other half will be frozen for use another time.

Meal Planning Monday

Last week's meal planning was a success, with everything made as planned and no extra shopping trips because I coudn't be bothered cooking what was on it. A quick check of the freezer yesterday showed that I've got tonnes of bread, for some reason, which isn't good on Slimming World. I've also got a tonne of other stuff in there that could really use running down which means that this week probably won't be that interesting.

To compensate for what is going to be a boring week's eating, I'm going to detail what I wish my menu looked like. Since it's a dream menu, I'm including puddings.

Mum's beef bourginon with garlic croutons
Raspberry Pavlova
Tues
lasagne and salad with baby spinach, cherry tomatoes, and red onion
pistachio and chocolate gelato
Wed
roast chicken with all the trimming (including Yorkshire pud)
treacle tart and custard
Thurs 
Lentil burgers with home made wedges and salsa.
spicy apple pie with whipped cream
Fri
Laksa with tofu or fresh prawns
Coconut custard with caramel syrup 
Sat 
home made pizza including vine ripened tomatoes, mozzarella and fresh basil
chocolate brownies (not completely cooked so they're still squidgy) served warm with fresh raspberries and creme fraiche
Sun 
chicken schnitzel, mashed potato, ratatouille, and gravy
steamed lemon pudding with pouring cream


Now that I've got myself salivating with half a dozen times of chopped tomatoes and some frozen veg to look forward to, I'll leave it there with the promise to have an actual real menu plan next week.

Meal Planning Monday

Here we go for this week:
Monday: Chicken fajitas(but with cous cous not tortilla for me)
Tuesday: Quorn stir fry with egg noodles
Wednesday: Sticky Five Spice Gammon *
Thursday: Frittata and salad
Friday: Chicken and butternut squash curry*
Sat: Chicken and vegetable fried rice
Sunday: Quorn sausage, Slimming World Chips, egg, tomatoes and spinach
* are recipes I've never cooked before. They're from the Slimming World Meals in Minutes Cookbook. 

It's a pretty chicken heavy menu this week, but I've gone right off red meat lately, and I never eat fish. 

I made 5 out of 7 meals on the plan last week. I missed the creamy mushroom chicken but the ingredients could be frozen so that's not a problem; and Sunday's pasta and spinach pesto ended up being pasta with a courgette and tomato sauce I had in the freezer. I'd be lost without my freezer. It's a 6ft upright one that was in the house when we bought it. What it lacks in ineffeciency it more than makes up for in the ability to bulk buy and freeze.

This week is pretty busy, so the meals either have to be ones I can make quickly (like the stir fry), or make in advance and freeze (like the curry and fajitas, which are ready and waiting).

Last week I tried herbed pork mince and cous cous for the first time. I wasn't wild about it and probably won't do it again. Unfortunately it made loads, so I've got another 2-3 meals worth of it in the freezer to be eaten.
