Meal Planning Monday - 6 January 2014


I'm back on the MPM #mealplanningmonday wagon after what I believe may have been three solid weeks of eating my own body weight in tins of chocolate. We all do it every year so why don't they dispense with the 1kg tins and sell them in vats of 50kg to save on the shopping? Imagine diving into a vat of Celebrations, Roses, Quality Street and Heroes...

Anyway... back to the meal plan.

Roast Beef, cauliflower cheese, stuffing balls, cabbage (that's tonight - I can't wait!)
Beef fajitas with Mexican rice 
Sour Cream Chicken
Chicken fried quinoa (or rice, if I forgot to buy quinoa)
Meatloaf
Pancetta, broccoli, chicken & ranch pizza

We're out for dinner one night as well because DH is turning 40 and I am celebrating by not cooking.

Meal Planning Monday - 3 September 2012

Hello and welcome to what is, for one of my kids, the first day of year 6. The youngest goes back tomorrow and it can't come a minute too soon. I almost planned a week of salads in anticipation of the hot weather that usually arrives to mock us as school goes back, but have not.

I am sticking with the more veg, less processed food this week. My menu is:

Chicken Enchilada Stuffed Zucchini Boats
Crock Pot Chicken Taco Chili
Crepes with spinach, bacon and mushroom
Fridge Frittata
Crunchy Chicken Breasts
Left Overs

What is most impressive about this is that I actually planned this last Monday - kapow! who says I can't be organised?

Meal Planning Monday - 14 May 2012

Despite my best laid plans, last week's meals were a bit hit-and-miss (and may have included Domino's pizza). I made the chicken and wild rice casserole, which was lovely and comforting on a miserable weeknight. Instead of doing the gammon with grilled peaches, I improvised and made a sauce with peaches, cranberry sauce, red onion and Dijon mustard. It was really nice! I served it with roasted new potatoes (chopped up with skins on, olive oil, and salt). The enchilada casserole ended up being just enchilada's.

This week, I am aiming to cook:
(this will get eaten as it is in the slow cooker now)
Slow Cooker Honey Sesame Chicken
Quick and delicious weekday chicken
Sausages, brown onion gravy, peas, carrots, and Yorkshire pudding
Courgette, basil and goat's cheese frittata
Meatloaf (beef), mashed potatoes and veg

I have a glut of apples, some shortcrust pastry, and a tin of condensed milk, so I think I may experiment with some sort of caramel apple flan type thing. Even if it looks atrocious, it's bound to taste delicious with those ingredients.

I think I will also bake these no butter sugar biscuits for lunchboxes

Meal Planning Monday - 24 October

Here we are again: Monday. Last week I was unwell and couldn't be bothered was far too sick to manage to post a meal plan. I regretted it as it definitely makes life easier having a plan. I've also changed my supermarket shopping routine, which is usually online from Asda, to instore at Lidl and Aldi and since I'm not 100% sure what they stock it's not as easy to plan. It's definitely cheaper though. I've saved £45-50 over 2 weeks.

This week's plan is:
 I am not sure what I will substitute for the canned biscuits. Maybe shortcrust pastry, or maybe a type of wholemeal muffin/cobbler type mix?
Garlic lamb chops
Spinach stuffed chicken breasts 
Cottage pie
Chicken Curry
Fridge Frittata


I'll be baking:
 Plum cobbler or crumble (nice and seasonal)
These use cake mix, which I don't normally use. I'll have to substitute heavy cream for the Cool Whip. They just look so tasty.
